Rosemary-Garlic Eggplant Pita Wraps with Herbed Yogurt Sauce

I like to make these sandwiches when I’ve also made Za’atar Lamb Meatballs and Crispy Cinnamon Chickpeas. You can fill your pita with solely the eggplant mixture and yogurt sauce, or round them out with meatballs and chickpeas. Either way, these sandwiches are filling and a good way to spice up your sandwich routine. I like to make these sandwiches when I’ve also made Za’atar Lamb Meatballs and Crispy Cinnamon Chickpeas.


 

ingredients

  • Avocado oil

  • 1 large eggplant, chopped

  • 2 cloves garlic, peeled, and chopped

  • 2 sprigs rosemary, stem removed, and chopped

  • 1 tsp red wine vinegar

  • Water

  • 1 package whole wheat pita bread

Toppings:

  • 1 cucumber, peeled, and chopped

  • 1 cup grape tomatoes, quartered lengthwise

  • Microgreens

  • Parsley, chopped

For the Herbed Yogurt Sauce – 

  • 1 cup unsweetened, plain greek yogurt

  • 1 tbsp fresh mint, stems removed, finely chopped

  • 1 tbsp fresh dill, finely chopped

  • 2 green onions, ends removed, finely chopped

  • Juice of 1/2 lemon

  • Olive oil

  • Pinch of sea salt

 

instructions

  1. Heat avocado oil in large pan, or skillet (I use cast iron)

  2. Once hot, add eggplant, stir, coating in oil

  3. Add garlic and rosemary, mix well

  4. Add vinegar, mix well

  5. Continue to cook over medium-low heat adding splashes of water if eggplant gets dry, or starts to stick to pan (when done, eggplant will be soft, translucent, and dish will be aromatic with smell of garlic and rosemary)

  6. Remove eggplant from heat

  7. Assemble pita sandwiches - Scoop eggplant mixture into pita bread, top with cucumber, tomato, micro greens, herbs, and Herbed Yogurt Sauce

  8. If you like, fill out the sandwiches with Za’atar Lamb Meatballs and Crispy Cinnamon Chickpeas.

For Herbed Yogurt Sauce:

  1. Mix all ingredients, except olive oil, in large bowl with fork

  2. Drizzle in olive oil and stir with fork (add as little, or as much as you like to achieve desired thickness)

  3. Top pita sandwiches, or other dishes

  4. Keep in air-tight container in fridge for up to 1 week
