Banana Walnut Pancakes

These pancakes are a family favorite. The recipe is based off of my elementary school music teacher’s recipe and I have yet to find a better one. Swap any add-ins you like, or stick to the original. It’s nostalgic food at its finest!

ingredients

  • 1 cup flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp sea salt

  • 1 tbsp raw (turbinado) sugar

  • 1 egg

  • 2 cups buttermilk

  • 1 tbsp olive oil

  • 1 ripe banana, smashed

  • 1/2 cup chopped walnuts

instructions

  1. Combine all ingredients except walnuts in a large bowl.

  2. Cook on hot griddle (I use butter) and add walnuts when bubbles begin to form on batter surface.

  3. Flip after a couple minutes, or once first side is golden.

  4. Cook another couple minutes.

  5. Serve immediately with your fav toppings.
