Egg Roll Stir Fry
Imagine deconstructing an egg roll and having a whole bowl filled with the delicious stuffing…sound yummy? It is! This dish is fast, satisfying, and can be made with any veggies you have on-hand. I eat mine along with sticky white rice, or make an entire Rainbow Bowl.
ingredients
- 2 tbsp oil 
- 4 stalks green onion, chopped 
- 2 cloves garlic, finely chopped 
- juice of 1/2 a lime 
- 1/3 cup soy sauce 
- 1 tbsp rice vinegar 
- 1 lb ground pork (or ground turkey) 
- 1 tsp ground black pepper 
- 1 cup shredded carrots 
- 2 cups shredded cabbage 
instructions
- Heat oil in a large skillet over medium heat 
- Add onions and simmer 5 minutes 
- Meanwhile, whisk together: garlic, lime juice, soy sauce, and rice vinegar, and add mixture to the skillet 
- Add ground pork and break up meat into small pieces, evenly coating in sauce 
- Add black pepper, cabbage, and carrots, combine well 
- Cook, stirring occasionally for 10-15 minutes (or until cabbage and carrots are desired softness) 
- Serve immediately with white rice, or build a Rainbow Bowl!
