I need a “crunch” on top of my meals! These seeds are one of my favorite ways to create a nutritious and satisfying crunch. Sprinkle these seeds on curries, soups, salads, smoothies, oatmeals/porridges, yogurts, etc. This is a versatile recipe. You can play with the flavors by adding a dash of your favorite spices.
1 cup raw pumpkin seeds
½ cup coconut flakes
1 tsp paprika
1 tsp cinnamon
1 tsp fine sea salt
Dash of avocado, or melted coconut oil
Preheat oven to 400 degrees F
Mix all of the above ingredients together in a large mixing bowl
Spread evenly (and in one layer) on baking sheet, transfer to oven
Heat no more than 2 minutes
Take pan out of the oven and transfer seeds to large plate, or cutting board (again, preserve one layer of seeds), let cool
Top on curries, salads, smoothies, etc.
