Spiced Seeds

 

I need a “crunch” on top of my meals! These seeds are one of my favorite ways to create a nutritious and satisfying crunch. Sprinkle these seeds on curries, soups, salads, smoothies, oatmeals/porridges, yogurts, etc. This is a versatile recipe. You can play with the flavors by adding a dash of your favorite spices.


 

ingredients

  •  1 cup raw pumpkin seeds

  • ½ cup coconut flakes 

  • 1 tsp paprika

  • 1 tsp cinnamon

  • 1 tsp fine sea salt

  • Dash of avocado, or melted coconut oil 

 

instructions

  1.  Preheat oven to 400 degrees F

  2. Mix all of the above ingredients together in a large mixing bowl

  3. Spread evenly (and in one layer) on baking sheet, transfer to oven

  4. Heat no more than 2 minutes

  5. Take pan out of the oven and transfer seeds to large plate, or cutting board (again, preserve one layer of seeds), let cool

  6. Top on curries, salads, smoothies, etc.
