Pineapple Mint Smoothie

 

This is my absolute favorite smoothie. I rarely choose favorites among my dishes, because variety is the most appealing aspect of cooking to me, however, I’ve perfected this smoothie over years of smoothie making and I LOVE it. It’s the one I come back to again and again. It’s refreshing, nourishing, and best of all, energizing.

 
 

 

INGREDIENTS

  • ½ frozen banana

  • ½ cup frozen pineapple

  • Juice of ½ an orange

  • ½ inch knob of ginger, peeled and roughly chopped

  • 1 mint sprig, stem removed

  • 2 large handfuls of spinach (1+ cup)

  • 1 tbsp coconut oil

  • Coconut water

 

INSTRUCTIONS

  1. Blend all of the ingredients in a high-power blender for about 1 minute

  2. Check consistency and blend more as needed (adjust the amount of liquid to desired consistency)  

  3. Serve in a bowl, or cup and add

  4. desired toppings

  • I have the smoothie pictured with various toppings, but this one is fabulous all by itself. I most often pour this smoothie in a glass and drink it straight.
